History
Paramount Restaurants was formed in 2003 and quickly became a major consolidating force in the industry. The purchase of Chez Gérard, Bertorelli, Livebait and Café Fish firmly established Paramount at the forefront of premium casual dining across the UK. Subesquently, the Caffè Uno chain was acquired and in September 2006 PPM Capital Management and Paramount Management puchased the business from the existing shareholders with a plan to grow the business aggresively.
"Our strategy is to expand our core brands in London and throughout the UK and our new format, Brasserie Chez Gérard is opening a new site every two weeks in the next 12 months.
Our restaurants are small and large, in local neighbourhoods and big cities, airports, London's West End and the Square Mile. Today we have almost 80 restaurants, tomorrow many more!
